Here you can sample typical Sicilian specialities as well as international cuisine. Come for a light lunch, or a three-course dinner with two options to choose from.

Maurizio Urso

Maurizio Urso’s cuisine is a 360-degree story of his beloved Sicily, of the history and cultural influences of the many peoples who have passed through this region, of the climatic and geographical characteristics and of the truest culinary traditions of the island.

Chef at Ristorante Eduardo, Hotel Parco delle Fontane, offers fresh fish dishes of the day but also of land and vegetarians, using only local products of which he knows the provenance, history and social and cultural value; meats, vegetables, fruit, meats and cheeses from small and fine artisanal products.

His land, therefore, as a starting and finishing point of his professional career and, in the middle, his travels in northern Italy, the meeting and frequentation with great masters such as Gualtiero Marchesi, Sergio Mei, Giorgio Nardelli and Gianfranco Vissani, with which since 2006 starts a constant collaboration that continues today.
